We had an unexpected guest today and absolutely no cookies, biscuits or snacks we could put on the table together with a cup of tea. So, we decided to make vegan banana muffins. Incredibly quick and easy – ready in 30 min. The only problem was, we ate them before our guest arrived… Had to make another batch really quickly… I need to stop eating hot-straight- from-the oven-stuff. No matter how good it is!
Here’s what you need:
- 4 small or 3 medium ripe bananas mashed up nicely
- 1/4 cup of vegetable oil (not olive oil)
- 3/4 cup of sugar
- 2 cups of plain flour
- 1 tsp of salt
- 1 tsp of baking soda
- sunflower seeds or any other seeds or nuts of your choice (optional)
Method:
- Pre-heat the oven to 180 degrees
- Mix mashed bananas with oil and sugar (we used a fork)
- Add flour, salt and baking soda and mix / fold together
- Fill 10 muffin cups with the mix (fill no more than 3/4 of muffin cup to leave room for it to rise)
- Sprinkle with seeds (or not)
- Bake for 25 minutes. Try to leave at least 3 for your guest (good luck!)
