Vegan ‘scrambled eggs’

Ingredients:

  • 1 tbsp. olive oil
  • 250g tofu, crumbled
  • 1 tsp curcuma / turmeric
  • a pinch of salt and pepper

Optional:

  • tomatoes
  • vegan sausage

Method:

Heat the olive oil on a frying pan, add tofu and turmeric. Fry until light golden and season.

Add any vegies you like; I usually add tomatoes or left over salad (as per the pic). Enjoy with a slice of rye bread with vegan butter.
